Michael and Theo work closely together at Momofuku. With a keen sense of flavour, and solid understanding of nutrition they strive to create dishes which are wholesome for the body and stimulating for the mind.
Michael Brogan from Dublin, Ireland and has 12 years experience in professional kitchens. Has worked in notable restaurants such as The Fat Duck, Jean George, The Modern and Momofuku Ko. Michael with a breath of experience brings to the table interesting recipe concepts with unique processes based on a firm understanding of classical techniques.
Theo is from Nairobi, Kenya. In addition to his culinary career which began in kenya and continued in Switzerland where he received the breath of his culinary education, he is also an accomplished bartender specialising in craft cocktails. Theo’s strength is flavor combinations, taking the dishes in new and interesting directions.
Together they combine their extensive culinary knowledge and expertise to develop new and progressive dishes designed to entice and excite.
