My father being from Madrid, Spain and Mother being Sicilian, from Italy gave me a natural talent for food. Although I am not at all familiar with Spaniard cuisine, my appetite for learning the Italian Kitchen, has always been my passion. From the few trips I took to Italy, My grandmother, an incredible chef, taught me the fundamentals of the Italian kitchen. I knew how to make Risotto at the age of nine! By the age of twelve I had learned how to knead the perfect pizza dough, sans eggs, oil, and sugar (unfortunately, the most common ingredients found in 99% of pizza today!). In my late twenties I went pre-med, but decided to drop the program due to the many financial constraints. Having acquired a deep knowledge of the human anatomy and physiology, I've incorporated this knowledge into my cooking.  My dishes consist of "clean," "wholesome," "organic," and natural foods, such as those my grandmother used back home in Italy. I do not accept anything less than the best. That is my standard, and that is what I offer. One of my specialties is the  anabolic diet. Based on the latest scientific studies, Doctors now know that they have been completely wrong in suggesting to their patients to completely cut off meats and fats from their diets. thus leading into the obesity epidemic we see today. We now know proteins and fats are not the enemy, but rather sugars and carbohydrates which cause obesity and diabetes.I don't have an extensive work related background in the restaurant industry, however, my cooking will help you eat to live and enjoy it, instead of living to eat.
