Keto Salmon Pad Thai





This was actually delicious. I have a shellfish allergy, and didn’t get an alert when I ordered it. Besides the swollen throat, I would also recommend taking the skin off the salmon.

Slow-Roasted Pork Carnitas Quesadillas





This may have been better cooked in the oven with the tortillas on a sheet pan, allowing them to get crispy. I used a microwave and they were hard and gummy. Some of the pork was tough.
