There are few things more satisfying than Chef Garces' signature tamales, and these braised pork carnitas tamales are especially comforting. Pork shoulder is braised in a citrus sauce until falling-apart tender, then tucked into a soft masa dough. The tamales are wrapped in corn husks and steamed in the traditional method, then served up with salsa verde and Mexican crema to complement the smoky filling. One bite and you'll see why tamales are considered one of Chef's specialties.
