They are an excellent source of beta-carotene, a pigment which has antioxidant properties and is the primary source of provitamin A. The body has the ability to convert beta-carotene into Vitamin A (retinol), which has multiple functions such as growth and development, reproduction, improving vision and boosting the immune system.
