Salmon is pan-fried at high heat to ensure a nice, crispy finish on the outside but a moist and tender inside. Chef Andres cooks the salmon with a Cajun seasoning that's full of flavor and packs a spicy punch. The medium level of heat goes perfectly with fresh avocado sauce and a refreshing cucumber salsa to cool everything off.
Andres started working years ago in the food industry, he is one of the hardest workers we've ever seen. He worked at different restaurants in Manhattan, the latest one he's been working at is Extra Virgin. So when I first opened it I wasn't sure what I was going to think. It was good though. The cucumbers were amazing! Salmon was okay a little over cooked but that could have been me leaving it in too long. I would order again.
