this preparation of the eggplant parmigiana, makes the eggplant much more tasteful, by grilling and than fry it. No water is left in it and when you bake the dish , the tomato sauce and the cheeses flavor the entire dish and make it so tasteful and rich. SO good that even cold is delicious. What a complete meal this is
