Chef Sergio’s take on this traditional Japanese street food includes juicy, tender chicken thighs, zesty green onion, and sweet red bell pepper, grilled and basted in a sweet and salty blend of umami-rich soy sauce, mirin, and sugar to give each component deliciously flavorful char. He serves a hearty portion atop a bed of steamed Jasmine rice garnished with sesame seeds for nutty crunch. This is the kind of meal that’s perfect anytime—as a hearty, one-bowl lunch or served with steamed edamame for a filling dinner.
