This dish is Chef Nahika's version of traditional Haitian djondjon, but adapted and updated as a savory orzo! The star of this dish is creamy, flavored with djondjon, a Haitian mushroom that brings loads of umami to the dish. Chef adds succulent shrimp cooked with a colorful sauce made with the holy trinity of Caribbean ingredients, tomato paste, bell peppers, and onions, blended with fresh herbs and Adobo spice to give the dish some spice and acidity. Fresh baby spinach adds bright earthy flavor. This dish is balanced, bright, flavorful, and comforting all at once!

Chef Nahika Hillery comes from a family of avid cooks - growing up she learned how to prepare traditional West Indian food while observing and practicing with several of her family members, especially her mother. Through Kreyòl Korner - Kreyòl is the native language spoken in Haiti - she has been able to share her beloved culture and food with people visiting from all over the world.
