Chef Maribel is sharing her go-to quesadilla that she eats at least once a week at home. Tortillas are cooked on la plancha (a cast iron skillet), then filled with cheese, potatoes, and Mexican chorizo cooked with what Chef calls the Mexican trinity—onions, tomatoes, and jalapeños. A tasty tomatillo salsa and a side serving of Mexican red rice with vegetables makes this the ideal meal any night of the week.
