This is a traditional casserole (Pastel) with a tasty mix of stewed beef, raisins, and olives, covered with a Chuclo (a peruvian variety of fresh corn) and parmesan cheese. This dish has a wonderful balance of sweet and salt, with a perfectly zippy fresh salad with red onion vinaigrette.
