Spanish Chicken & Chorizo

Every Latin household has their version of Arroz con Pollo (Chicken with Rice). Chef Maribel's version is inspired by her Mom's recipe, seasoned with Spanish seasonings found in a paella like paprika, saffron, red bell peppers, piquillo peppers, and Spanish chorizo. A quick pickled red onion salad with cherry tomatoes adds just the right amount of acidity to this dish.
