This stuffed salmon is a showstopper, and as Chef Nahika puts it, “fantastic.” Butterflied fillets cradle a filling of tender shrimp, sautéed spinach, and tangy sun-dried tomatoes, brightened with garlic. Marinated in a sweet chili glaze and baked to a golden crust, they’re served with buttery mashed potatoes providing a creamy contrast to the hearty seafood-forward flavors.

This dish was pretty good. I thought there could have been more mashed potatoes and less sundried tomatoes but overall I enjoyed it very much. I wish the gray skin of the salmon had been removed.
