This seasonal salad is a refreshing meal for hot summer days. It showcases delightfully sweet cherry tomatoes accented by the aroma of fresh basil and accompanied by Israeli couscous. The salad is seasoned with the zest and juice of fresh lemon to lighten the dish and add a bit of acidity, making it a lovely pairing with the firm and tasty lemon pepper tofu. Enjoy this dish cold or warm!
Wow, this is absolutely fantastic! Thank you for the healthy option. This will definitely be a regular.

The lemon was way over powering. Could not eat.

This is probably my second favorite dish on this service. I eat it warm, sprinkled with grated parmesan (because I don't like raw tomato). I had never had tofu prepared this way before, wonderful!
