Chef Chris wanted to come up with a healthier alternative to the deep-fried eggplant you typically see on Italian menus, but without sacrificing any of the flavor. He decided on simply roasted thin slices of seasoned eggplant, layered Napoleon-style with hand-sliced fresh mozzarella, and served with fresh roasted tomato sauce.

this was basically slices of eggplant swimming in thin tomato sauce. with melted cheese .there didn't seem to be any breadcrumb coating. . you can do much better.

Did not care for this version of Eggplant Parmesan. Too soggy when heated up, and flavor was just not there for me.

Great taste, not fried. Great as a vegetarian main or as a side with some pasta. The sauce is a nice light tomato sauce more like a vodka sauce and there is plenty for a small side of pasta.
