Ethiopian Spiced Chicken and Egg

Chef Einat’s take on this Ethiopian classic leans deep into the warmth of berbere, a spice blend layered with paprika, cardamom, ginger, clove, and chile. Chicken thighs braise slowly with onions and garlic, while roasted potatoes and a spice-steeped egg soak up every bit of flavor. Pickled Swiss chard stems and caramelized onions bring sharpness and sweetness that keep the whole plate in balance.
