Galician Chicken Empanaditas

A tribute to Galicia's beloved empanadas, these flaky empanaditas are filled with chicken simmered with onions, tomatoes, and sweet peppers. Finished with toasted almonds and sweet raisins for Chef Sandra's signature sweet-savory bite, and served with creamy piquillo aioli for dipping.
