Chef Andres is serving up a little taste of Louisiana! Perfectly baked Swai fish—a type of catfish—is tender and flaky in the center, but has a nice crisp finish thanks to a crust of Cajun spices. Served with a buttery Cajun pan sauce that adds richness, the dish is made complete by garlicky kale (standing in for the traditional collard greens), as well as sautéed zucchini and bell peppers. This dish proves you can have nutritious, well-balanced meals without sacrificing on flavor.

One of my favorites but it seems I am receiving less and less and smaller piece of fish.

The swai was okay but the sauce detracted from the meal. It did not have the savoriness I would expect from a roux or pan sauce. It was just bland and unpleasantly textured.
