Inspired by all the flavors of a Mexican burrito, this tofu bowl features seasoned baked tofu and veggies like corn and roasted peppers, all on a bed of rice and black beans. A creamy, dreamy avocado sauce rounds out this delicious and healthy plant-based meal.

Kinda bland and more rice than beans or tofu. The peppers are incredibly fresh! Needs something a bit more exciting somehow. I am also more a spicy girl, and I add jalapeños and fresh cilantro.

IMO (obviously) This needs some summer squash. Zucchini or some other green calabacita would would look especially nice.
