Inspired by all the flavors of a Mexican burrito, this tofu bowl features seasoned baked tofu and veggies like corn and roasted peppers, all on a bed of rice and black beans. A creamy, dreamy avocado sauce rounds out this delicious and healthy plant-based meal.

Kinda bland. More veggies/beans, a different sauce, and maybe some cheese?

Very solid! Just not super memorable. Not too different from a chipotle burrito bowl. Ingredients were fresh, but I added a little chipotle aioli to bring in some additional flavor.
