Chef Chris wanted to come up with a healthier alternative to the deep-fried eggplant you typically see on Italian menus, but without sacrificing any of the flavor. He decided on simply roasted thin slices of seasoned eggplant, layered Napoleon-style with hand-sliced fresh mozzarella, and served with fresh roasted tomato sauce.

everybody loved the flavors of this dish but unfortunately the eggplant was not cooked properly and was so hard, basically raw; so unfortunate because it had such potential.

I think I mostly liked this for the cheese. The eggplant rind texture was really off putting and the sauce had a smell and aftertaste that kind of ruined the rest of the meal

This dish was disappointing. The eggplant was undercooked and needed more than just being by itself even if it was cooked properly. The cheese and sauce were both inadequate.
