I cut the chicken and tossed it in a sauce pan with butter, covered. Crisped it then added the rice. Squeezed the lime. Sooooo good! I did add hot sauce because I love spicy food

I loved how the tomatoes pop open and add their flavor to the rice and as the sauce on the chicken melts, you get a really yummy rice going on.
