Chef Ali Clem, the dynamic force behind Austin's acclaimed la Barbecue, has carved an inspiring path through the world of Texas barbecue. A Fort Worth native, Clem, began her culinary journey in East Texas at age 18, working her way up through various roles in the hospitality industry. Her pivotal moment came when she moved to Austin and teamed up with barbecue royalty John Mueller to help open a food trailer on South First Street. This would evolve into la Barbecue, co-founded in 2012 with her late wife, LeAnn Mueller. Inspired by their travels throughout Asia, Europe, and Latin America, the duo crafted a menu that set la Barbecue apart. It’s a masterful blend of tradition and innovation: slow-smoked brisket and ribs are paired with unexpected sides like spicy kimchi, chipotle coleslaw, smoky black beans, and queso shells & cheese, creating a bold, globally influenced barbecue experience. Under Clem's leadership, la Barbecue continues to garner national fame, earning top spots on Texas Monthly’s “Top 50 Barbecue Joints” list and even being awarded a Michelin Star in 2024. It is her relentless focus on consistency and quality that has solidified la Barbecue’s place as a must-visit destination in Austin’s vibrant food scene.
