There are lots of variations of arepas—Latin American corn cakes served whole or split and filled with different flavor combinations. Here, Chef Jose brings us his take, layering the golden-baked cakes with melty mozzarella, velvety black bean purée, and smoky poblano rajas. A side of fried sweet plantains (maduros) adds a caramelized bite, with a drizzle of creamy avocado guasacaca to finish it off.
