Coconut-Poached Salmon

This super-satisfying meal is a perfect pick-me-up anytime you’re craving something light and tropical. “It’s one of my favorite dishes,” Chef Bernstein says. First, she makes the rich coconut broth, infused with aromatic vegetables and the delicate flavor of lemongrass. Then, she uses it to finish tender, buttery seared salmon. On the side: Creamy coconut rice topped with toasted shaved coconut for crunch and crisp-tender bok choi lightly sautéed with umami-rich soy sauce. It’s an irresistible combination of tastes and textures.
