Cuban Ropa Vieja

The beloved Cuban staple ropa vieja gets its name—"old clothes"— from the way beef shreds into ragged strands after hours of braising. Chef Michelle simmers it in a tomato sauce sharpened with capers, bell pepper, and a touch of allspice. White rice, sofrito-spiked black beans, and fried sweet plantains round out the plate.
