Shrimp Causa with Huancaina

This take on Peruvian causa starts with its defining potato base: riced Yukon potatoes seasoned with aji amarillo, lime, and olive oil. Rather than building the causa in its more traditional layered style, with a filling tucked between the seasoned potatoes, this version tops them with a chilled, herb-flecked shrimp salad, plus a boiled egg and black olives. A creamy huancaina comes on the side, with a lime wedge for a final squeeze.
