If you’re not normally a fan of curry, Chef Michelle suggests you give this dish a try! With tender cauliflower and chickpeas simmered in a mild coconut curry on a bed of fluffy Jasmine rice, this is an extremely approachable introduction into curry. We love this vegan dish because it’s so easy to eat, totally satisfying, bright and tasty.
