Lechon, or Cuban pork, is heavily marinated with herbs, lime, and delicate spices. The pork is cooked over low heat until its fork tender. The mojo de ajo sauce is a staple of Cuban cooking and is bright and flavorful with onions, cilantro, cumin, and lots of lime. Chef Michelle serves her lechon with white rice, black beans (frijoles), and sweet plantains for a perfect balance of flavors and textures.
