The beef short ribs are cured to bring out the most flavor, then slowly braised with vegetables, red wine and beef broth. When they are fork tender, we serve them with their cooking liquid and a puree made from poached cauliflower and a little brown butter. we also marinate the mushrooms with Argentine chimichurri and slowly grill them until crisp. Top with the gremolata, a crunchy mix of breadcrumbs and herbs and spices.
