
Scallion Pancake Okonomiyaki

This is a mashup of two of Chef Maiko's favorite comfort foods: okonomiyaki and scallion pancake! Okonomiyaki is a Japanese savory pancake and popular street food in Japan and in this version, it's mashed up with the super popular Taiwanese scallion pancakes. Scallions, corn and zucchini are mixed into savory batter and griddle-cooked to perfection, then topped with scallion aioli, tonkatsu sauce (a savory sauce perfect for this type of dish), and nori crunch. It makes for the most satisfying any-time-of-day meal, and best of all, it's vegetarian, too!

About Maiko Kyogoku
Chef Maiko Kyogoku grew up in New York in a restaurant-owning family, so food and hospitality is no stranger to her.
