Rosemary Pork Loin

Boneless pork loin is seasoned with rosemary, kosher salt, and black pepper, then seared until charred and blushing. It’s sliced and paired with a grilled peach pico, made by charring peaches, red onion, and jalapeño, then dicing and tossing them with lime juice, salt, and black pepper. The sweetness of the fruit meets a gentle heat from the peppers—a rustic, elegant complement to the savoriness of the pork.
