This dish looks as good as it tastes! A colorful, vegetarian version of the classic stuffed pepper but made with sweet, spicy poblanos. Stuffed with tender jackfruit that mimics the texture of pulled meat, plus black and kidney beans, and topped with Mexican shredded cheese and a drizzle of avocado crema, this dish is packed with protein and flavor.

About Nahika Hillery

Chef Nahika Hillery comes from a family of avid cooks — growing up she learned how to prepare traditional West Indian food while observing and practicing with several of her family members, especially her mother. Hillery came to love the flavor profiles of her home: full of spices, with balanced seasoning, and influences from a number of cuisines and styles, including Haitian and Creole. She decided to turn these early experiences with food into something more than cooking with and for friends and family at home. Combining her passion for cooking, cultural pride, and entrepreneurial spirit, Hillery opened Kreyòl Korner, the first Haitian food truck in Austin, Texas, in 2017. Through Kreyòl Korner (Kreyòl is the native language spoken in Haiti) she has been able to share her beloved culture and food with people visiting from all over the world. From a winning feature on the Food Network to critical acclaim in her new hometown of Austin, Hillery can't wait to share her story with you through her delicious food.
