This dish is Chef David’s ode to his time at Bouchon Bistro, where a similar preparation paid homage to the legendary French chef Paul Bocuse. Inspired by the classic pairing of salmon and buttered leeks, Chef lightens the concept—replacing the richness of butter with a delicate sofrito cream. The result is still rooted in tradition, but intentionally made fresher and lighter.
