Savory, umami-rich, creamy, tangy… with its combination of crushed tomatoes, earthy fresh oregano, Parmesan cheese, heavy cream, and, yes, vodka, Chef Silvia’s take on this traditional dish satisfies almost every flavor craving—in one hearty meal. The luscious, just-thick-enough sauce clings to every ridge of the rigatoni (FYI: rigato is Italian for “lined” or “striped”). About that vodka: Just like a squeeze of fresh lemon juice, the alcohol’s sharpness intensifies and brightens all the other flavors in the dish. Pair it with a light, refreshing green salad and crusty bread, and you’ve got an Italian feast, any night of the week.

About Silvia Arevalo

Chef Silvia, a native of Mexico, hails from a family deeply rooted in entrepreneurship, having been raised by merchant parents. Her formative years were spent contributing to various family enterprises, including grocery stores, bakeries, taquerias, and churrerias, instilling in her a strong work ethic under the guidance of her entrepreneurial father.
Upon arriving in Atlanta at the age of 24, Chef Silvia immersed herself in the culinary world, honing her skills in Italian restaurants over several years. A shift in career focus led her to dedicate herself to social work, particularly aiding immigrants who were victims of crime. However, the challenges brought about by the pandemic became a pivotal moment for her, prompting a reevaluation of her career trajectory and aspirations.
Mangia La Pasta, a longstanding dream, materialized after almost a year of meticulous planning and preparation. With the invaluable assistance of her sister, Chef Silvia brought this vision to life. Subsequently relocating to Austin to embark on a new chapter as a business owner, she welcomed her brother Ignacio to the team soon after the restaurant's opening.
Chef Silvia's culinary objective is to craft uncomplicated yet delectable recipes that accentuate the essence of home-cooked Italian cuisine. Eager to contribute to the dynamic and thrilling food scene of the Texas market, she is thrilled to introduce Mangia La Pasta to the region. With an unwavering commitment to customer satisfaction, Chef Silvia invites you to experience the culinary delights she passionately creates. Buon Appetito!
