Cheesy Rosa-Sauced Ravioli

Are you ready for a comforting bowl of pure pasta perfection? This is it! Let’s start with those ravioli: Delicate handmade pasta envelops a sumptuous filling of Ricotta, Romano, and Parmesan cheeses, flawlessly balanced to achieve a harmonious blend of creaminess and richness. Next, the Rosa sauce: Chef Sylvia Arevalo’s blend of tangy tomatoes and sweet, anise-flavored basil gets its enchanting blush from a touch of cream. The velvety smooth result clings to each luscious cheese-stuffed pillow, adding a layer of complexity. A garnish of grated Parmesan cheese adds the finishing touch. With its universal appeal, this dish is going to become one of your new go-tos.

About Silvia Arevalo

Chef Silvia, a native of Mexico, hails from a family deeply rooted in entrepreneurship, having been raised by merchant parents. Her formative years were spent contributing to various family enterprises, including grocery stores, bakeries, taquerias, and churrerias, instilling in her a strong work ethic under the guidance of her entrepreneurial father.
Upon arriving in Atlanta at the age of 24, Chef Silvia immersed herself in the culinary world, honing her skills in Italian restaurants over several years. A shift in career focus led her to dedicate herself to social work, particularly aiding immigrants who were victims of crime. However, the challenges brought about by the pandemic became a pivotal moment for her, prompting a reevaluation of her career trajectory and aspirations.
Mangia La Pasta, a longstanding dream, materialized after almost a year of meticulous planning and preparation. With the invaluable assistance of her sister, Chef Silvia brought this vision to life. Subsequently relocating to Austin to embark on a new chapter as a business owner, she welcomed her brother Ignacio to the team soon after the restaurant's opening.
Chef Silvia's culinary objective is to craft uncomplicated yet delectable recipes that accentuate the essence of home-cooked Italian cuisine. Eager to contribute to the dynamic and thrilling food scene of the Texas market, she is thrilled to introduce Mangia La Pasta to the region. With an unwavering commitment to customer satisfaction, Chef Silvia invites you to experience the culinary delights she passionately creates. Buon Appetito!
