Chef Chase knows exactly what you crave on any given weeknight, and serves it up with ease and sophistication. Chicken breast that's been marinated in herbs and spices is grilled to perfection, sliced, and served atop classic Texas Caviar a.k.a. fresh corn, black bean, black eyed peas, and pepper salad. Chef pairs the dish with a creamy cilantro-lime dressing to drizzle atop everything along with fresh lime and more fresh cilantro. This fresh and satisfying meal can be enjoyed cold or warm, making it the ideal quick lunch or light dinner.

I enjoyed this more than I expected, it was very good. I would have liked a slightly larger portion of the Texas caviar.
