Chef Maribel gives lasagna a Mexican twist, layering rolled corn tortillas around juicy marinated chicken and a medley of roasted zucchini, mushrooms, and sweet corn. The filled tortillas are stacked and bathed in a smoky guajillo-tomato sauce, then crowned with bubbling Pepperjack cheese. As it bakes, the sauce soaks in, the top turns golden and blistered, and each bite delivers a rich, textured burst of warmth and depth.
My least favorite meal so far. The texture of the chicken was almost like a paté. Flavor was meh. Lots of unclean ingredients like seed oils, several different gums, carrageen, natural flavors, etc.

It just has a very strange taste and consistency. Seems weird to stretch Mexican into being called lasagna. Maybe that just created a mind trick that we did not care for.
