Raised in San Antonio, fajitas were a weekend staple for Chef Maribel, with fresh-off-the-grill chicken, flour tortillas, and all the accouterments. Chef Maribel's version lets you build your own fajita-inspired tacos with flour tortillas, char-grilled marinated chicken, and traditional rajas (grilled portobello mushrooms and poblano peppers). Top your tacos with pepperjack cheese and Chef's handmade fire-roasted tomato salsa, and enjoy with a side of red rice for a super satisfying Taco Tuesday, any day of the week.
