
Southern Fried Steak

This is a take on a Texas classic known as chicken fried steak. It has nothing to do with chicken except for the breaded cooking technique. Chef Maribel’s version is a tribute to family dinners at Tip Top in San Antonio—her mother’s favorite spot—and her travels through Urugray, where she fell deeper in love with milanesas. Served with cauliflower puree, garlicky green beans, and a peppery gravy on the side.
