Traditional beef barbacoa is the star of the show—rich, flavorful chuck marinated in a combination of chiles, along with lime, onion, cumin and other spices, then braised to fork-tender perfection. It’s stuffed into three flour tortillas, garnished with fresh cilantro and onions, and paired with a bright Salsa Verde—a blend of tangy roasted tomatillos and chiles. On the side: Mexican Red Rice, which gets its gentle blush from an infusion of tomatoes.
