Take your taco night up a level. For her version of this hearty classic, Chef Maribel draws inspiration from her family heritage and her culinary training throughout South America. Traditional beef barbacoa is the star of the show—rich, flavorful chuck marinated in a combination of chiles, along with lime, onion, cumin and other spices, then braised to fork-tender perfection. It’s stuffed into three flour tortillas, garnished with fresh cilantro and onions, and paired with a bright Salsa Verde—a blend of tangy roasted tomatillos and chiles. On the side: Mexican Red Rice, which gets its gentle blush from an infusion of tomatoes.
