For this fusion of Mediterranean and American favorites, Chef Einat combines juicy ground beef with herbs and spices (and a touch of jalapeño for heat), then smashes the patties flat on a griddle for those irresistibly crisp, lacy edges. She sandwiches each one into whole wheat pita bread filled with blistered tomatoes and thin-sliced red onions seasoned with tangy sumac. On the side: flavorful za’atar roasted fingerling potatoes. The accompanying sauce—a bright, zesty blend of peperoncino, lemon, and garlic—enlivens every bite of this balanced, nourishing meal.

Having grownup in Tel Aviv, she served as a cook in the Israeli Army before traveling Europe to work in kitchens, and eventually landing in New York City as an ambitious young chef. After 15+ years leading the New York culinary scene and establishing multiple restaurants, Admony continues to innovate and inspire with elevated yet comforting homestyle cooking from her childhood.
