Vegetable Flatbread Pizza

Grilled flatbread acts as a chewy canvas for a colorful array of toppings, starting with a lush stroke of whipped feta. From there, it’s crowned with seared vegetables, including earthy mushrooms, vibrant zucchini, mild shishito and fresno peppers, and spicy pepperoncini—all marinated with extra-virgin olive oil, lemon, garlic, and mint. A velvety salt-roasted beet hummus is served on the side for dipping, plus freshly grated Parmesan to sprinkle over the top as you please.
