Southwest Chili-Cumin Tofu Bowl

Tofu is rubbed with chili, cumin, and smoked spices, then grilled until the edges take on a light char. Black beans simmer with aromatics, while roasted corn and peppers bring sweetness and depth. Everything sits over lime-scented rice, served with a creamy poblano-cilantro sauce on the side for gentle heat and a fresh green note.
