This luxe sandwich is one of Chef Nora’s all-time favorite creations. It starts with a buttery, oven-baked croissant layered with sharp cheddar and filled with roasted chicken breast tossed in Dijon mustard, Kewpie mayo, and sour cream. Studded with Honeycrisp apples, celery, green onion, dried cranberries, and toasted pecans, it’s finished with a touch of black pepper and served with a side of fresh greens and cherry tomatoes.

Just not my cup of tea. Bland and would have liked more veggies? More celery, onion? Lettuce? Needed some crispiness and flavor. Didn’t need the cheese. Not quite sure.

A graduate of Le Cordon Bleu, she has extensive experience developing Chinese cuisine at TAO Los Angeles and NeueHouse. Nolasco also worked with nutritionist Elissa Goodman on her Holistic S.O.U.P Cleanse catering program, serving some of her celebrity clients. Nolasco wants to share her passion for food and celebrate diversity by offering her Chinese dishes to the palates of different people and cultures of L.A. communities.
