This Asian-inspired "noodle" bowl features a delightful fusion of fresh flavors and crunchy textures. Perfectly cooked kelp noodles are tossed in a luscious sesame sauce infused with aromatic spices and almonds, which make it creamy and nutty (and add an extra bit of protein!) The noodles are paired with crispy roasted tofu and plated on a bed of fresh spinach with carrot ribbons, toasted almonds, and a sprinkle of toasted sesame seeds. This plant-based dish tastes as good as it looks—and it looks amazing.
