Spiced Lamb Kofte

These little lamb meatballs are filled with fresh herbs, delicate spices, and a touch of ginger, which make them truly irresistible. They are great anytime of day, especially when paired with creamy tzatziki sauce. The smoky baba ghanoush takes on a whole new flavor profile, swapping out the traditional eggplant for zucchini. It has a little bit of yogurt and a lot of mint, and as far as Chef Michelle is concerned, zucchini can be used for almost anything—so be prepared to become zucchini's biggest fan after trying this dish.
