This was delicious! The rice was well cooked, the beets were just the right texture. The arugula added slight bitterness and dimension and the goat cheese made the entire dish luxurious and creamy. Very yum!

The beets in this dish are different. They are diced small and have the taste of canned beets, and the beet juice they leave behind isn't vibrant like it was before with the larger diced beets. Also the pistachios are crumbs and the arugula is usually browning.
This was a favorite meatless dish but I don't want to continue to order it if it stays this way.

This was good but I agree with a lot of people, warming the beets, arugula and goat cheese is weird. I kept them separate. 4 stars if I follow my own rec.

I really loved the idea of this, and have had this combination before, but this time around the saltiness of the goat cheese (which i think may have actually been feta) overwhelmed the sweetness of the beets. Disappointed.

I'm glad I tried this again after the first batch had a recipe error with so much salt it was inedible. This batch was delicious and I loved every ingredient. Improve the QA & it will be a favorite.
