Tinga de Pollo or Chicken Tinga comes from the city of Puebla in Mexico. Chef's Fabiola's take is a pretty typical Mexican recipe made with only a few, flavor-packed ingredients like tomato, garlic, cilantro, and chipotle in adobo. The marinated chicken thighs are cooked until pull-apart tender, then plated with all the fixings to build your own tacos: soft flour tortillas, queso fresco cheese, fresh cilantro, and Chef's handmade guacamole.
