Shawarma-Spiced Chicken

Chicken thighs are marinated in Greek yogurt and shawarma spice—a fragrant blend of cumin, coriander, paprika, turmeric, and warming aromatics—then grilled until charred and juicy. They’re served over a hearty mix of lentils, barley, and tri-color quinoa, cooked separately for optimal texture. A cool Greek yogurt sauce blended with lemon, garlic, and olive oil adds a refreshing counterpoint.
