This bowl from Chef Esther is a masterful mashup of global flavors. Smoky sausage, sweet red peppers, and fragrant basil come together in a tomato-rich sauce that seeps into the rice, giving it that “dirty” color. A side of cucumber salad, tossed in soy and rice vinegar with a hint of chili, cuts through with a cool, crisp bite.
